The selection begins with cultivars such as Coratina, Peranzana, Leccina, and Ogliarola Garganica. From these, we create blends that highlight the fruity aroma and intense yet balanced flavor, making it suitable to enhance any type of dish or cuisine.
THE CLEMENTE OIL SUPPLY CHAIN: The olive harvest runs from October to December/January. To ensure quality, it is crucial that the harvested olives are processed at the mill within 12 hours. Once processed, the first oil, called “novello,” is stored at controlled temperatures to maintain freshness. It is then packaged/bottled and shipped in a short time. This is how Clemente extra virgin olive oil is born.
