Quick, easy, and yummy recipe that will spice up your palate. The perfect sandwich panini with mozzarella cheese, 'Nduja and arugula
Ingredients
- 8 slices sourdough bread
- 250 gr fresh mozzarella, cut into 16 slices
- 4 tablespoons. ’Nduja (spreadable spicy salami)
- 2 tablespoons. balsamic vinegar from Modena (Italy)
- 3 cups baby arugula (about 100 gr.)
- 1 tablespoon. Extra Virgin Olive Oil.
Start to Finish: 15 minutes
Preparation
In a bowl, add the arugula, the Extra virgin olive oil, and the vinegar. Spread 1 tbsp. ’Nduja on 1 slice of bread. Layer 4 slices of mozzarella on another slice of bread. In large skillet, cook bread slices, covered, over medium-high heat until cheese melts for 1 1/2 minutes. Top ’Nduja toast with 3/4 cup arugula. Sandwich with cheese toast. Repeat with remaining ingredients.
